The first step is to gather your ingredients. You will need: 2 large carrots, 2 sticks of celery, 1 onion, 1 green pepper, 400g of pork sausages (you can use beef or turkey sausages if you prefer), 1 can of chopped tomatoes (400g), 1 tbsp tomato purée, 1 tbsp olive oil, 200ml of chicken stock or water, 1 bay leaf, salt and pepper to taste.

Begin by peeling and chopping the carrots and celery sticks into small pieces. Peel and chop the onion into small pieces also. Cut the green pepper into thin strips.

Next, heat the olive oil in a large saucepan over medium heat. Add the chopped vegetables and fry for 5 minutes until they start to soften.

Add the sausages to the pan and fry for a further 5 minutes until they are browned all over. Add the chopped tomatoes, tomato purée, chicken stock or water and bay leaf to the pan. Season with salt and pepper to taste. Bring to a boil then reduce the heat to low and simmer for 30 minutes until the vegetables are cooked through.

Serve straight away with some boiled rice or pasta on the side if desired. Enjoy!
